1 pound ground breakfast sausage (or vegan equivalent), BROWNED AND DRAINED
1 cup shredded sharp cheddar cheese (or vegan equivalent)
6 eggs, lightly beaten (or an equivalent amount of egg whites)
¼ cup of butter (melted)
2 cups milk (or vegan equivalent)
1/2 teaspoon dry mustard
1/2 teaspoon salt (optional depending on the salt content of the sausage and cheese you use.)
Spread sausage in bottom of 12 X 8 X 2-inch baking dish and sprinkle with cheese.
Combine eggs, milk, butter, dry mustard and salt in a bowl and pour over sausage and cheese then refrigerate overnight.
Heat oven to 400°F. Bake casserole for 35 minutes or until set.
