Ingredients
BISCUITS (homemade or store bought)
2 cups all-purpose flour
1 tbsp baking powder (not needed if using self rising flour)
1/2 tsp salt (not needed if using self rising flour)
1/2 cup cold unsalted butter (cubed)
3/4 cup cold buttermilk
FILLING
4 slices turkey bacon
4 large eggs
4 slices American cheese
1 tbsp butter (for cooking eggs)
Salt and pepper (to taste)
Directions
BISCUITS
Prepare the Biscuits (if using homemade):
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
Gradually stir in the cold buttermilk, mixing just until the dough comes together.
Turn the dough onto a floured surface, gently pat it into a 1-inch thick rectangle, and fold it over 3 times.
Cut out biscuits using a round cutter and place them on the baking sheet.

COOK BACON
Heat a skillet over medium heat.
Add the turkey bacon slices and cook for 2-3 minutes on each side or until crispy. Remove from the pan and set aside.
COOK EGGS
In the same skillet, melt 1 tbsp of butter over medium heat.
Crack the eggs into the pan, cooking them to your preferred doneness (scrambled or fried).
Season with salt and pepper. Set aside.
ASSEMBLE THE BISCUITS
Split the biscuits in half.
Layer each with a slice of turkey bacon, cooked egg, and a slice of American cheese.
